Chicken Broth

Check out this great chicken broth recipe and website! Good stuff!

Chicken Broth Recipe:

2 Tablespoons of raw apple cider vinegar

One whole organic chicken cut up or two leftover carcasses

Extra chicken backs, necks, feet if you can get them (these parts have more cartilage and are full of healing gelatin)

4-5 coarsely chopped seasonal root vegetables

5 stalks of celery coarsely chopped

1 organic yellow onion coarsely chopped

3-4 cloves fresh garlic

Directions

• Add 4-6 quarts of spring or filtered water.

• Add apple cider vinegar, chicken, root veggies and all ingredients.

• Let sit for 1/2 hour to start pulling minerals out of bones.

• Next, bring to a boil and skim brown foam from surface.

• Pull out chicken and take off the meat after about an hour ½ of cooking to use in soup later.

• Lower to simmer for 24 hours.

• Strain and pour into clean canning jars with 1 ½ to 2 inches of breathing space

• Cool, lid and put into refrigerator until completely cooled

• Put excess jars in freezer (must have breathing space and be cold)

• Optional: Once cooled, skim fat and use it for cooking.

Optional:

Chicken heads and feet offer huge nutrients to your broth. The amount of gelatin they contain

is far better for your joints than any supplement. Check availability with local farmers,

and don’t let the squeamish look in the stockpot.

Mayo Perfected!

I did it! I succeeded in making homemade mayo! Now eating healthy mayo made with olive oil and coconut oil! Goodbye nasty soybean oil!

Check out the recipe below! So easy!

Weston Price Recipe

To make mayo, wash 2 eggs in warm soapy water, dry and then crack one egg into a small food processor. Separate the other egg and add the yolk. Add 1 tsp Dijon mustard, 1 ½ TBL lemon juice and a generous pinch of sea salt.

You may also add 1 T of homemade whey. This is optional but adds several weeks of refrigerated shelf life to mayo.

1. Pulse the food processor to mix.

2. Next add ¾ - 1 cup of extra virgin olive oil, expeller-pressed sesame oil, coconut oil or ghee, or a combination of these oils in a thin stream while pulsing the food processor. That’s all there is to it!

A delicious variation on the homemade mayo is to add a tsp or two of onion powder for a mouth-watering ranch dressing for salads and dips!

Table Top Christmas Trees

I just purchased a tabletop real Christmas tree at the Chester Shop Right! I love these trees. They are real, inexpensive and easy to maintain and dispose of. In fact, "tabletop trees were the most common kind in Europe and North America until about 1900." In this economy, maybe we need to start thinking about our over-sized ideals that we hold so dearly as Americans? Maybe it's time to consider a table top tree. :) Merry Christmas!
